Interview with Wayne Yoon, Outto Dine Sdn Bhd

The Yum List talks with Wayne YOON, (aka the friendly Korean waiter) Director of the Outto Dine Group and Manager of Spasso Milano and Weissbrau Straits Quay. 

What do you do and how did you get into the industry?
I am the Director of the Northern Operations for the Outto Dine Group, where I manage the daily operations of Spasso Milano Straits Quay as well as Weissbrau Straits Quay. I am someone who likes visiting new places, because in the process of doing that I get to meet and interact with people from different walks of life, while at the same time being exposed to different cuisine. I chose the hospitality industry because of the great opportunities to experience and interact with different cultures and people.

Where have you lived around the world?
In my early days, I lived in countries including Bangladesh, India, USA, Switzerland, France, Korea, China, Taiwan and Japan. After years of working in the hotel sector and then a brief stint in the cruise liner sector, I finally settled in Malaysia - because of the culture and food diversity that this country offered, as well as making sure I have a steady home for my two kids.

Share with us an interesting story from one of your postings.
Every posting is interesting, challenging, and a learning experience. I can’t single out one.

What's the best/ worst part of your job?
The best thing about my job is I get to meet so many different people, whilst getting to enjoy some good food together.
The thing I like least about my job is when a guest calls to make a reservation, and then they don’t turn up. For me, making a reservation is not informing - it is a promise that you will come. The frustrating part is when the guest does not answer our calls or reply to our messages after we try to contact them to enquire about their attendance.

What's your favourite Malaysian food?
Beef Rendang

What's your favourite meal at Weissbrau/ Spasso...?
Weissbrau: Crispy Pork Knuckle, Homemade Herb Sausages, Mussel Seaman Pot, Flammkuchen, Caesar Salad, Chocolate Mousse.
Spasso: Fresh Buffalo Mozzarella Cheese Pizza, Ricotta Spinach Ravioli, Aglio Olio Pasta, Garlic Focaccia Bread, Millefoglie, Tiramisu.

What's your perfect food and wine pairing?
Crispy Pork Knuckle paired with Shiraz
Fresh Buffalo Mozzarella Cheese Pizza paired with Pinot Grigio

What can guests look forward to in terms of Food and Beverage with the Outto Dine group in 2013?
Our philosophy for Outto Dine will always be the same - Good Food, Good Service and Good Dining Experience. We have held on to this philosophy before 2013 and we plan to continue practicing this philosophy regardless what year it is.
